Love cornbread just about any way you fix it, but this is great its really moist.

  • 2 box
    small boxes cornbead mix
  • 1 1/2 stick
    butter, melted
  • 1 small
    onion, finely chopped
  • 5
    eggs, use 5 whites and 2 yolks
  • 2 c
    cottage cheese
  • 1 pkg
    frozen chopped broccoli (10 oz.)

How to Make Jiffy Broccoli Cornbread


  1. Mix all together with spoon. Pour into large greased baking dish. Or 2 8 x 8 dishes
  2. Bake at 400 for 40 minutes. Serve hot.
