home milled whole wheat bread (for bread machine)

My fiancée and I have recently started milling our own whole grain flour in an attempt to be ecologically and economically friendly, but we've had a very hard time figuring out how to get our bread just right, as the home milled stuff is quite a bit coarser than factory milled flour. Well, I finally figured it out! ...even though I had to compromise and use part factory milled, at least half of it is ours (and hopefully all of it will be once we get a better mill). :o)

Ingredients
- 1 1/3 cups milk
- 1/4 cup water
- 2 tablespoons honey (or whole, raw sugar)
- 4 teaspoons butter, melted
- 2 cups whole grain wheat flour (fresh milled is best)
- 2 cups unbleached all purpose wheat flour
- 1/8 cup vital wheat gluten flour
- 1 teaspoon fine sea salt
- 1 1/4 teaspoons active dry yeast
How To Make home milled whole wheat bread (for bread machine)

Step 1Add ingredients to bread machine according to manufacturer's instructions.

Step 2If available, select the whole grain cycle, if not use the basic wheat or white cycle.

Step 3If machine allows "extended rise", select 20 mins.

Step 4Select bread color "medium".

Step 5Press "start" and walk away! Enjoy your bread about 4 hours later (I set mine overnight, so we have a fresh loaf in the morning).
