good ol' fashioned fruit loaf
1/2 cup of walnuts were in the original recipe. Original recipe also had 1 tsp ginger added but was too spicy for my liking.. was a bit like gingerbread flavor I find my loaf always sinks in the middle so could be better if made in smaller loaf tins. This makes a nice dense loaf, a lot like my mother's recipe

Ingredients
- 1 cup sugar
- 50 grams butter
- 1 cup cake fruit mix or sultanas
- 1 cup dates
- 1 tablespoon golden syrup
- 1 1/4 cups water
- 1 teaspoon mixed spice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
How To Make good ol' fashioned fruit loaf

Step 1Combine sugar, butter, fruit mix, dates, golden syrup and water. Bring to boil and simmer 5 minutes. Cool for 10 minutes.

Step 2Stir in spice, vanilla and salt. Sift in flour, baking soda and baking powder. Mix to combine.

Step 3Pour into prepared/lined loaf tin and bake at 170C (180 in my panasonic) for 1 hour or until skewer comes out clean. Leave to cool in tin 15 minutes and try to keep for a day before eating as it improves with age.
