The key to a soft tortilla is soft dough.

Ingredients

  • 1 cup warm water
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup oil
  • 1 1/2 cups whole wheat flour (i use freshly ground)
  • 1/2-3/4 cup unbleached all purpose flour

How To Make flour tortillas

  • Step 1
    Place liquids in bowl.
  • Step 2
    Add the dry ingredients.
  • Step 3
    Knead until the dough is workable but not stiff. (Keep the dough moist for soft tortillas.)
  • Step 4
    Let stand 10 minutes.
  • Step 5
    Pull out golf size tortillas & place onto floured board.
  • Step 6
    Either roll with floured rolling pin or press down with fingers. Of course you could press with a tortilla press if you have one. I like pressing down with my fingers because I feel like I get a better shaped tortilla.
  • Step 7
    Cook on a griddle on both sides until slightly golden.
