ellen's dad's favorite buckwheat cakes
While the rest of us ate pancakes with maple syrup (normal food), our dad would order up a plate of buckwheat pancakes with blackstrap molasses--ugh! I can still see him sitting there shoveling in forkful after forkful. As a kid, I thought it looked (and smelled) terrible. As an adult, I just might try it one day. Ingredients
- 1 1/4 cups buttermilk
- 3 tablespoons butter, melted
- 1 large egg
- 1/2 cup all purpose flour
- 1/3 cup buckwheat flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- - cooking spray, butter flavor
How To Make ellen's dad's favorite buckwheat cakes

Step 1Whisk buttermilk, butter, and egg together in bowl until blended. Combine flours, soda, and salt in another bowl. Whisk buttermilk mixture into dry ingredients until just blended.

Step 2Heat a large nonstick skillet or griddle over medium-high heat. Spray lightly with cooking spray. For each pancake, spoon scant 1/4 cup of the batter into skillet, spreading batter lightly with back of spoon.

Step 3Cook until bubbles form on surface of pancakes, about 2 minutes. Turn pancakes over and cook 1 to 2 minutes more. Repeat with remaining batter. Serve with butter and the syrup of your choice. Makes 12 pancakes.
