Easy Yeast Rolls

Nancy Thomas

While trying to find a yeast roll recipe that didn't intimidate me, I came across one in a cookbook that I bought from my daughter's Cheer Squad from 2003. The first time I made them, I followed the recipe exactly as written & they had way to much salt. I have made them three times since then, tweaking here & there to get the taste I wanted. Now I'm working on getting the look I want. They are still a work in process, lol.

1 pkg
active dry yeast
2 Tbsp
1 c
warm (almost hot) water
2 c
bread flour
1 tsp
2 Tbsp
oil (i use canola oil)

1Disolve yeast and sugar in water until it foams on top (about 5-10 minutes)
2Mix together flour & salt. Add water-yeast mixture. Mix in oil & stir until well blended. Cover with towel & let rise in a warm dry place, (about 45 minutes- 1 hour)
3Place on a floured surface & knead for a few minutes. Roll out & either cut out with a small biscuit cutter or cut into pieces & place them 3 to a cup in a muffin pan. Cover & let rise for another 45 minutes.
4Bake @ 350 degrees for 30 minutes or until tops are golden. Brush tops with melted butter.
