This recipe came from Berea College, Berea, KY, when I was in the home economics class there in 1960. It is so easy to make because it requires very little effort...I like that:)! It never fails! Everyone in my family loves it, and I find that I have to double the recipe each time I make it for a family of four. The recipe supposedly serves four; however, not my four!

Ingredients
- 1 cup boiling water
- 1/2 cup self-rising meal
- 1/2 cup milk
- 1 tablespoon soft margarine
- 2 - eggs, well beaten
How To Make easy spoonbread

Step 1Pour boiling water over meal and margarine, mixing well. Add cold milk and blend well before adding beaten eggs. Stir well.

Step 2Pour mixture into a buttered one-quart baking dish. Bake at 400 for 20 minutes or until set and slightly brown.

Step 3Serve hot with butter. Enjoy!

Step 4*Note: This recipe can be made healthier by using skim milk, egg beaters, and diet margarine. It does not affect the taste nor consistency.
