This is what my family calls 'Yankee" dumplings. If you allow the lid to stay closed during the 10 minute cooking time, they will never be gummy!

Ingredients
- 2 cups flour (1/2 white & 1/2 oat or wheat is good)
- 1/2 teaspoon salt
- 4 teaspoons baking powder
- 1 tablespoon (heaping) parmesan cheese, opt
- - milk
How To Make dumplings

Step 1Mix dry ingredients thoroughly and add enough milk to make a stiff batter. Spoon batter into boiling broth until entire top is covered in batter. Cover with a tight fitting lid. Reduce heat and simmer 10 minutes.

Step 2DO NOT LIFT THE LID DURING THIS TIME!!

Step 3The dumplings come out light and fluffy!!
