Step 2Why does this work? Well, to answer that question, let us examine the difference between all-purpose flour, and cake flour. Actually it is all in the amount of protein each flour contains. Cake flour is low in protein, being about 8%. All-purpose flour can go from 9, up to 11% protein. Understand that protein converts to gluten during the kneading and baking process. The lower the protein the better it is for cakes, because it delivers a nice tender texture, and rises well, during the baking process.
