This is an excellent Wheat Bread recipe. I got it from my favorite bread machine cookbook: The Bread Lover's Bread Machine Cookbook.(By;Beth Hensberger. The Harvard Common Press, Boston Massachusetts) This is quite a large cookbook,and I have been absolutely delighted with every recipe I have used here. It has any bread you could possibly want, and the recipes are collected and adapted by a Master Breadmaker. Enjoy!

Ingredients
- - this recipe is to be used w/bread machine
- 1 cup boiling water
- 2/3 cup cracked wheat or bulgur
- 1/4 cup molasses
- 3 tablespoons unsalted butter or margarine cut into pieces
- 2 teaspoons salt
- 1 cup water
- 3 1/2 cups bread flour
- 1/2 cup whole wheat
- 1 tablespoon plus 1 tsp of wheat gluten
- 1 tablespoon saf yeast, or 1 tbsp plus 1/2 tsp of bread machine yeast or 1 pkg of active dry yeast
How To Make cracked wheat bread

Step 1Pour the boiling water over the cracked wheat in a bowl. Add the molasses, butter, and salt. Let stand 1 hour at room temperature to soften.

Step 2Place the ingredients into the pan according to manufacturers directions, adding the cracked wheat mixture and the additional water as the liquid ingredients. Set crust on medium and program for the Basic Cycle; press Start. (This recipe MAY be used with the Delay Timer).

Step 3When the baking cycle is ends, immediately remove the bread from the pan and place it on a rack. Let cool to room temperature before slicing.
