corn bread (old recipe)
Another little treasure that I found in Mom's notebook. Her cornbread was always excellent!! Hope you like it, too. One of the things about cornbread is that it is so forgiving... you can add other things, like drained canned corn, or cheese or peppers or just about anything you can think of and it will work out nicely. I've even seen it layered with cornbread on the bottom, tomato, onion, hamburger meat mixture, more cornbread and baked in the oven. Anything goes once you have the cornbread, itself, down. You can even add cottage cheese, shredded cheese and broccoli to make a filling meal

Ingredients
- 1 1/2 cups cornmeal
- 1 cup flour
- 1 1/2 cups milk
- 4 teaspoons baking powder
- 1 teaspoon salt
- 3 tablespoons sugar
- 2 tablespoons butter
- 1 - whole egg, well beaten
How To Make corn bread (old recipe)
-
Step 1Mix and sift the dry ingredients... add milk, butter, and well beaten egg.
-
Step 2Beat well and pour in a greased shallow pan
-
Step 3Bake 25 minutes in a quick oven (375)
-
Step 4Note: If you add other ingredients you will need to change the cooking time. It will probably take longer to bake and may need to be done at 350 to give it better time and temp. Just keep your eye on it and write down what it takes the first time, so it can be remembered later.
