This blueberry loaf is moist and easy to make with a few ingredients. You can also add lemon zest and/or lemon flavoring if you'd like. If you slice it into 12 slices, each one is approximately 3 net carbs.

Ingredients

  • 1/4 cup softened salted butter
  • 1/2 cup sweetener such as Stevia
  • 1/4 cup full-fat half and half
  • 2 teaspoons pure vanilla extract
  • 5 large eggs, room temperature
  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 2 teaspoons baking powder
  • 1 cup fresh or frozen blueberries

How To Make blueberry loaf - the keto way!

  • Step 1
    Preheat oven to 350 degrees. Spray a loaf pan with nonstick cooking spray.
  • Step 2
    In a large bowl, whisk together the butter and sweetener until well blended.
  • Step 3
    Add the half and half, vanilla, and eggs, and continue to whisk until eggs are fully incorporated.
  • Step 4
    Add the almond flour, coconut flour, and baking powder and mix thoroughly.
  • Step 5
    Gently stir in the blueberries and pour into the prepared pan. Bake 40 minutes, or until the middle is cooked through when tested with a toothpick.
  • Step 6
    Cool 10 minutes in the pan. Then invert onto a cooling rack to cool completely before slicing.
