This blueberry loaf is moist and easy to make with a few ingredients. You can also add lemon zest and/or lemon flavoring if you'd like. If you slice it into 12 slices, each one is approximately 3 net carbs.

Ingredients
- 1/4 cup softened salted butter
- 1/2 cup sweetener such as Stevia
- 1/4 cup full-fat half and half
- 2 teaspoons pure vanilla extract
- 5 large eggs, room temperature
- 2 cups almond flour
- 2 tablespoons coconut flour
- 2 teaspoons baking powder
- 1 cup fresh or frozen blueberries

Step 1Preheat oven to 350 degrees. Spray a loaf pan with nonstick cooking spray.

Step 2In a large bowl, whisk together the butter and sweetener until well blended.

Step 3Add the half and half, vanilla, and eggs, and continue to whisk until eggs are fully incorporated.

Step 4Add the almond flour, coconut flour, and baking powder and mix thoroughly.

Step 5Gently stir in the blueberries and pour into the prepared pan. Bake 40 minutes, or until the middle is cooked through when tested with a toothpick.

Step 6Cool 10 minutes in the pan. Then invert onto a cooling rack to cool completely before slicing.
