Ingredients
- 1 yellow bell pepper, roasted, peeled and seeded and minced
- 4 roma tomatoes, chopped into small dice
- 1 clove garlic, minced
- 1/2 cup basil, chopped fine
- 1 - loaf italian or french bread, cut into thin slices
- 1/2 pound mozzarella cheese, grated
- 1/4 cup asiago cheese or parmesan cheese
- 1/2 tablespoon extra virgin olive oil
- salt to taste
- freshly ground black pepper
How To Make best bruschetta

Step 1Toss roasted yellow pepper, tomatoes, garlic and basil together with salt and pepper to taste.

Step 2Top each slice of bread with mozzarella cheese and place in the oven just until cheese starts to melt and bread crisps up a bit.

Step 3Top each bruschetta slice with a teaspoon of pepper/tomato mixture. Sprinkle with Asiago or parmesan cheese.

Step 4Drizzle bruschetta with olive oil, place bread slices on a platter and serve.
