Ingredients

  • 1 yellow bell pepper, roasted, peeled and seeded and minced
  • 4 roma tomatoes, chopped into small dice
  • 1 clove garlic, minced
  • 1/2 cup basil, chopped fine
  • 1 - loaf italian or french bread, cut into thin slices
  • 1/2 pound mozzarella cheese, grated
  • 1/4 cup asiago cheese or parmesan cheese
  • 1/2 tablespoon extra virgin olive oil
  • salt to taste
  • freshly ground black pepper

How To Make best bruschetta

  • Step 1
    Toss roasted yellow pepper, tomatoes, garlic and basil together with salt and pepper to taste.
  • Step 2
    Top each slice of bread with mozzarella cheese and place in the oven just until cheese starts to melt and bread crisps up a bit.
  • Step 3
    Top each bruschetta slice with a teaspoon of pepper/tomato mixture. Sprinkle with Asiago or parmesan cheese.
  • Step 4
    Drizzle bruschetta with olive oil, place bread slices on a platter and serve.
