I just have to share this easy and delicious recipe! There are only 3 ingredients in this recipe. These muffins are so easy I almost felt guilty making them! Weight Watchers shows they are 97 calories per muffin, or 2 points each. The beauty of this recipe is that you can use any cake mix you like- spice cake, yellow, or even chocolate! The muffins came out incredibly moist. They do not taste like a low calorie muffin- that's for sure! Yummy- and a super big hit in my house. The original recipe states you should get 24- but I only got 18. Maybe I made my muffins huge! :)

Ingredients

  • 1 box yellow cake mix (18 oz)
  • 1 can pumpkin (15 oz)
  • 1 cup water

  • Step 1
    Mix all ingredients with a mixer. Pour into muffin cups and bake at 350 for 20-25 minutes. That's it!
