Ingredients
- 1 cup all purpose flour
- 1 cup white wheat flour
- 1/2 cup white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup unsweetened apple sauce
- 1 cup skim milk
- 2 large eggs
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen blueberries
How To Make low cal blueberry muffins

Step 1Preheat oven to 350 degrees. Spray a muffin tin with nonstick cooking spray.

Step 2Sift together flours, sugar, baking powder, baking soda, and salt.

Step 3In a separate bowl combine the apple sauce, lemon juice, eggs, milk and vanilla extract. Add the liquid ingredients to the flour mixture, stirring just until moist.

Step 4Fold in the blueberries.

Step 5Spoon the batter into 12 muffin cups. Bake at 350 degrees for 22 minutes, or until golden.
