healthy muffins (gluten free)

This is a recipe I found in a cookbook and revised to lower the fats and wheat. It is one of my hubby's favorite snacks. They freeze really well, but they need refrigerated to keep them from spoiling. They are very moist.

Ingredients
- 1 cup applesauce, unsweetened
- 2 - eggs or equivalent egg substitute
- 1 3/4 cups almond milk
- 2 teaspoons vanilla extract
- 1/8 teaspoon sea salt
- 1/4 cup non fat dry milk
- 3/4 cup date sugar (ground dried dates) sugar also works.
- 1 cup oat bran
- 1 1/2 cups oat flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1/4 cup flax seeds, ground or whole
- 1 cup dried cranberries
- - chopped walnuts
How To Make healthy muffins (gluten free)

Step 1Mix applesauce, eggs, milk and vanilla. Add salt, non-fat dry milk and date sugar.

Step 2Mix dry ingredients and stir in to wet mix.

Step 3Add flaxseeds, cranberries and nuts.

Step 4Spoon into foil muffin liners. These are so moist they stick to the paper muffin liners.
