This is a recipe I found in a cookbook and revised to lower the fats and wheat. It is one of my hubby's favorite snacks. They freeze really well, but they need refrigerated to keep them from spoiling. They are very moist.

Ingredients For healthy muffins (gluten free)

1 capplesauce, unsweetened
-
2eggs or equivalent egg substitute
-
1 3/4 calmond milk
-
2 tspvanilla extract
-
1/8 tspsea salt
-
1/4 cnon fat dry milk
-
3/4 cdate sugar (ground dried dates) sugar also works.

1 coat bran
-
1 1/2 coat flour
-
1 1/2 tspbaking soda
-
1 tspcinnamon
-
1/4 cflax seeds, ground or whole

1 cdried cranberries
-
chopped walnuts
How To Make healthy muffins (gluten free)

1Mix applesauce, eggs, milk and vanilla. Add salt, non-fat dry milk and date sugar.

2Mix dry ingredients and stir in to wet mix.

3Add flaxseeds, cranberries and nuts.

4Spoon into foil muffin liners. These are so moist they stick to the paper muffin liners.
