healthy mapple, almond and blueberry muffins

3 perfect flavors for a fresh, healthy, and of course tasty muffins. This recipe requires 2 bowls, 1 spoon, and little to no time. These vegan muffins are super moist, filled with blueberry, and they are nutrients dense, of course.

Ingredients

  • 1/3 cup oats flour
  • 1 cup almond flour
  • 2 scoops maple-vanilla vegan pro (raw nutritional)
  • 2 tablespoons flax meal
  • 1 teaspoon baking powde
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon baking soda
  • 2 tablespoons almond butter
  • 1/2 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups blueberry
  • maple flakes to garnish

How To Make healthy mapple, almond and blueberry muffins

  • Step 1
    Preheat oven at 350C
  • Step 2
    In a small bowl, mix flax meal with water, and set aside for 10 minutes.
  • Step 3
    While the flax meal is thickening, add the almond flour, oats flour, vegan pro, baking soda and baking powder in a medium bowl. Mix well.
  • Step 4
    Add the almond butter, apple cider vinegar, coconut sugar, and vanilla extract to the dry ingredients, and mix until homogenous.
  • Step 5
    Fold in the blueberry and pour into a muffin pan greased of line with muffin tray.
  • Step 6
    Sprinkles some maple flakes on top and bake for 25 minutes.
