These are tasty, moist and "almost" healthy!

Ingredients

  • 1 cup almond meal
  • 1 cup flaxseed flour (bob's mills)
  • 1/3 teaspoon baking soda
  • 3 - eggs( i used egg substitute)
  • 1/2 cup apple juice(sweetened or unsweetened)
  • 3 tablespoons brown sugar
  • 1 tablespoon unsalted butter (softened)
  • 1/4 cup honey

How To Make flaxseed-almond meal muffins

  • Step 1
    Blend flours and baking soda (by hand) Add the eggs one at a time- mixing well. Add butter, brown sugar, honey. Mix throughly until the consistency of a cupcake batter. Add more apple juice (1 tablespoon at a time, if too thick
  • Step 2
    Pour batter into muffin tins (lined with paper cups) half full.
  • Step 3
    Bake @ 350 degrees for 20-25 minutes or until toothpick in center comes out clean. Let cool
