Ingredients
- 1 cup almond meal
- 1 cup flaxseed flour (bob's mills)
- 1/3 teaspoon baking soda
- 3 - eggs( i used egg substitute)
- 1/2 cup apple juice(sweetened or unsweetened)
- 3 tablespoons brown sugar
- 1 tablespoon unsalted butter (softened)
- 1/4 cup honey

Step 1Blend flours and baking soda (by hand) Add the eggs one at a time- mixing well. Add butter, brown sugar, honey. Mix throughly until the consistency of a cupcake batter. Add more apple juice (1 tablespoon at a time, if too thick

Step 2Pour batter into muffin tins (lined with paper cups) half full.

Step 3Bake @ 350 degrees for 20-25 minutes or until toothpick in center comes out clean. Let cool
