I have made this before but failed to take pictures. I will make it again very soon and snap my own pic. This cornbread literally melts in your mouth. It is so light and flavorful. And a bit sweet for those with a sweet tooth, like me!

Ingredients

  • 1 Tbsp
    honey
  • 1
    egg
  • 4 Tbsp
    (1/2 stick) butter, melted
  • 1/2 c
    milk
  • 1/2 c
    water
  • 1/2 c
    white sugar
  • 1 c
    yellow corn meal
  • 1 c
    all purpose flour
  • 1-1/2 tsp
    baking powder
  • 1/2 tsp
    salt

How to Make ELLEN'S SWEET CORNBREAD

Step-by-Step

  1. In a medium bowl, whisk together honey, egg, butter, milk, and water. In a separate bowl, combine sugar, corn meal, flour, baking powder, and salt. Stir gently to combine.
  2. Slowly add the dry ingredients to the wet ingredients until they are all combined. The batter should be a bit lumpy.
  3. Pour the mixture into a greased 8x8-inch baking dish. Bake in a preheated 350-degree oven for 25-30 minutes, or until set in the middle and golden brown.

    Serve with lots of melted butter!
