I have made this before but failed to take pictures. I will make it again very soon and snap my own pic. This cornbread literally melts in your mouth. It is so light and flavorful. And a bit sweet for those with a sweet tooth, like me! Recipe: Thecountrycook.net Photo: Cookandbemerry.com

Ingredients

  • 1 tablespoon honey
  • 1 - egg
  • 4 tablespoons (1/2 stick) butter, melted
  • 1/2 cup milk
  • 1/2 cup water
  • 1/2 cup white sugar
  • 1 cup yellow corn meal
  • 1 cup all purpose flour
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon salt

How To Make ellen's sweet cornbread

  • Step 1
    In a medium bowl, whisk together honey, egg, butter, milk, and water. In a separate bowl, combine sugar, corn meal, flour, baking powder, and salt. Stir gently to combine.
  • Step 2
    Slowly add the dry ingredients to the wet ingredients until they are all combined. The batter should be a bit lumpy.
  • Step 3
    Pour the mixture into a greased 8x8-inch baking dish. Bake in a preheated 350-degree oven for 25-30 minutes, or until set in the middle and golden brown. Serve with lots of melted butter!
