blueberry butternut squash bread

This was in my church cook book many years back. I know it is a very old recipe.My Aunt had this recipe in the cook book. It was so delicious. I needed to share this recipe. The combo sounds strange,but boy it is delicious!

Ingredients

  • 3 - eggs beaten
  • 1 1/4 cups sugar
  • 1/2 cup canola oil
  • 2 teaspoons vanilla extract
  • 1 cup butternut squash cooked and mashed
  • 1 cup fresh or frozen blueberries,if frozen drain well after thawing
  • 1/2 cup walnuts chopped
  • 3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup apple sauce

How To Make blueberry butternut squash bread

  • Step 1
    combine eggs,sugar,oil, apple sauce,vanilla and squash
  • Step 2
    sift dry ingredients together
  • Step 3
    add dry ingredients to wet ingredients and sir well to combine
  • Step 4
    fold in blueberries and nuts
  • Step 5
    pour in to 2 greased loaf pans. Bake at 325 degree oven for 1 hour and 15 minutes
  • Step 6
    cool on wire rack. Enjoy
