This is a modified version of a recipe I saw on another site. It was called a cake but, I see it more as a muffin or breakfast bread. I add blueberries or apples with cinnamon when I have them.

Ingredients For banana oatmeal muffins

1 stickbutter
-
2/3 cbrown sugar (firmly packed)

2eggs

1 tspvanilla extract

1 cvery ripe bananas

1 tspbaking soda

1/4 tspsalt

3/4 cflour - all purpose

1 1/3 cquick oats (not instant)
How To Make banana oatmeal muffins

1Mix flour, salt, baking soda and oats in bowl and set aside. (I put my oats in the processor first to make the muffins a smoother texture.)

2Cream butter and sugar. Beat in eggs, vanilla and bananas.

3Add in oatmeal/flour mix. Spoon into greased muffins tins. Bake 350 for 35 minutes.
