banana oatmeal muffins

This is a modified version of a recipe I saw on another site. It was called a cake but, I see it more as a muffin or breakfast bread. I add blueberries or apples with cinnamon when I have them.

Ingredients

  • 1 stick butter
  • 2/3 cup brown sugar (firmly packed)
  • 2 - eggs
  • 1 teaspoon vanilla extract
  • 1 cup very ripe bananas
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup flour - all purpose
  • 1 1/3 cups quick oats (not instant)

How To Make banana oatmeal muffins

  • Step 1
    Mix flour, salt, baking soda and oats in bowl and set aside. (I put my oats in the processor first to make the muffins a smoother texture.)
  • Step 2
    Cream butter and sugar. Beat in eggs, vanilla and bananas.
  • Step 3
    Add in oatmeal/flour mix. Spoon into greased muffins tins. Bake 350 for 35 minutes.
