banana oatmeal muffins

This is a modified version of a recipe I saw on another site. It was called a cake but, I see it more as a muffin or breakfast bread. I add blueberries or apples with cinnamon when I have them.

Ingredients
- 1 stick butter
- 2/3 cup brown sugar (firmly packed)
- 2 - eggs
- 1 teaspoon vanilla extract
- 1 cup very ripe bananas
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup flour - all purpose
- 1 1/3 cups quick oats (not instant)
How To Make banana oatmeal muffins

Step 1Mix flour, salt, baking soda and oats in bowl and set aside. (I put my oats in the processor first to make the muffins a smoother texture.)

Step 2Cream butter and sugar. Beat in eggs, vanilla and bananas.

Step 3Add in oatmeal/flour mix. Spoon into greased muffins tins. Bake 350 for 35 minutes.
