Ingredients
- 1 1/2 cups all purpose flour
- 1 teaspoon ground cinnamon
- 1/3 cup brown sugar, lightly packed
- 2/3 cup white sugar
- 2 large eggs
- 1/2 cup butter softened
- 1 1/2 teaspoons vanilla extract
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
- 2 - apples peeled and chopped
How To Make apple cinnamon muffins

Step 1Preheat oven to 350 degrees Grease and flour 12 muffin cup tin or a 9 x 5 loaf pan or a bundt tin

Step 2Mix brown sugar and cinnamon together in a bowl and set aside I usually peel the apples and put into the food processor and pulse till chopped Beat white sugar and butter together until smooth and creamy

Step 3Beat in eggs 1 at a time and add vanilla Combine flour and baking powder together in another bowl and stir into creamed butter mixture

Step 4Mix milk into batter until smooth Pour half the batter into muffin cups Add half the apples and half the cinnamon mixture Lightly pat the apple and cinnamon mixture into the batter

Step 5Pour the remaining batter over the apple layer Top with remaining apples and add more brown sugar mixture Bake for 30 - 40 minutes
