oatmeal cinnamon almond bread

I am not a person who likes oatmeal, but my husband does. I was in the mood for a sweet bread with almonds and oatmeal in it, since I had so much on hand. My husband was the guinea pig.....He loved it as much as my friends did. I also took this to our Church Social....none was brought home....

Ingredients

  • 1 3/4 cups all purpose flour
  • 1 1/2 cups boiling water
  • 1 cup quick cooking oats
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 stick butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sliced almonds

How To Make oatmeal cinnamon almond bread

  • Step 1
    Preheat oven to 350 degrees. Place oats in a small bowl. Place water in a small saucepan and bring to a boil. Combine flour, salt, baking soda, and cinnamon in small bowl, set aside.
  • Step 2
    Place butter in large bowl. Beat with mixer set at high speed until creamy. Add sugars gradually beating constantly until well blended. Add eggs one at a time, beating well after each addition. Beat in vanilla extract. Gradually add flour mixture to creamed mixture and beat until smooth. Stir in cooked oats, add sliced almonds, mix well.
  • Step 3
    Spoon batter into a well greased 9x5 pan. Bake until toothpick inserted in center of loaf, comes out clean. About 1 hour.
