My grandma used to make quick breads in the summer and fall. We always had an abundance of zucchini from the garden to make zucchini bread.

oil
2 c
sugar
1 Tbsp
vanilla
1/2 tsp
nutmeg
1/4 tsp
baking soda
1 c
grated zucchini
2 c
flour
1 tsp
cinnamon
1 tsp
salt
1/4 tsp
baking powder
1 c
chopped nuts (optional)

How to Make Zucchini Bread

Step-by-Step

  • 1Beat eggs until light and fluffy. Add sugar, oil, and vanilla. Mix until becomes thick. Add zucchini and stir thoroughly.
  • 2Sift flour, cinnamon, baking powder, baking soda and salt. Mix with other ingredients until smooth.
  • 3Add chopped nuts if desired. Bake in 2 greased and floured loaf pans at 350 degrees for 1 hour.
