My grandma used to make quick breads in the summer and fall. We always had an abundance of zucchini from the garden to make zucchini bread.

Ingredients For zucchini bread

  • 3
    eggs
  • 1 c
    oil
  • 2 c
    sugar
  • 1 Tbsp
    vanilla
  • 1/2 tsp
    nutmeg
  • 1/4 tsp
    baking soda
  • 1 c
    grated zucchini
  • 2 c
    flour
  • 1 tsp
    cinnamon
  • 1 tsp
    salt
  • 1/4 tsp
    baking powder
  • 1 c
    chopped nuts (optional)

How To Make zucchini bread

  • 1
    Beat eggs until light and fluffy. Add sugar, oil, and vanilla. Mix until becomes thick. Add zucchini and stir thoroughly.

    Sift flour, cinnamon, baking powder, baking soda and salt. Mix with other ingredients until smooth.

    Add chopped nuts if desired. Bake in 2 greased and floured loaf pans at 350 degrees for 1 hour.
