We had a local barbeque place named Up in Smoke in Keller Texas. It was a local icon but in the Fall of 2013 the owner retired and no one bought the business. They were famous for their corn fritters. So here is the recipe and I hope you enjoy them. They are my daughter and her friends" favorite

creamed corn(i use delmonte)
1 c
2 tsp
1 large
1 tsp
baking powder
1/2 tsp
1/2 c

How to Make Up In Smoke Corn Fritters


  • 1Sift dry ingredients together then add egg to milk and mix with dry ingredients.
  • 2Fold in corn then drop spoonfuls or use a small ice cream scoop, into hot fat and fry until brown on both sides. They should be slightly smaller than a golf ball.
  • 3Drain on paper towels. Serve with Honey butter
