I received this receipe from the owner of a near by farm in Wales during one memorable summer vacation. Always a treat.

yield Makes 1 dozen

Ingredients

  • 2 - eggs
  • 1/2 pint 300ml milk
  • 3 ounces 75g melted butter
  • 4 ounces 100g self rising flour
  • 2 ounces 50 g sultanas or currants

How To Make llangofllyn pikelets

  • Step 1
    Beat the eggs, the milk and the melted butter. Add the flour and beat to a smooth batter. Add currants.
  • Step 2
    Heat griddle or cast iron fry pan and lightly oil. Drop tablespoonfuls of mixture on the griddle. Lightly brown on one side and then turn over to lightly brown the other.
  • Step 3
    Serve warm with butter and a sprinkling of caster sugar(quick dissolving)
