This recipe for muffins is a much lighter version that won't weight you down in the mornings. It is a much healthier alternative than most other snacks as well. They pack well and don't crumble, making them good for lunches on the go.
1Preheat oven to 375. Place paper cups in a twelve cup muffin pan.
2In a large bowl, combine flour, sugar, salt and baking powder. If using cinnamon, add here. Add strawberries and banana to flour mixture tossing till well combined.
3In a small bowl, combine cooled melted butter, milk and beaten egg. Pour into flour mixture, gently stirring until just combined.
Divide batter equally among muffin cups and bake for 25 minutes or till a tester stuck in the middle of a muffin comes out clean. Cool and enjoy.
