Ingredients
- 1 large very ripe banana
- 1 - egg with enough milk to make one cup liquid
- 1 stick butter, softened
- 1 teaspoon vanilla
- 1 1/2 cups all purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- - nuts (optional)
How To Make one banana banana muffins

Step 1In a large bowl, mix all ingredients together with electric mixer on slow to medium speed. Mix until lumps are mostly gone, but do not overmix.

Step 2Spray a 12-compartment muffin tin with cooking spray. Fill cups 2/3 full with batter.

Step 3Bake in a preheated 350-degree oven for 15-18 minutes, or until toothpick inserted in center of muffin comes out clean.

Step 4Can also be baked in regular bread pans for 55 minutes. The baked bread or muffins can be wrapped in foil and frozen. When ready to use, defrost, unwrap and reheat in paper towel in the microwave.
