healthier lemon date muffins
These are very tasty and a hit with the family. I love the texture of these muffins. I have made them with other dried fruit, fresh fruit, and nuts as well. I even made them with trail mix once (just chop it up first and dust it with flour). I thank my grandma for this recipe, God bless her. My mom saved it for me along with many others. We loved the combination of lemon and date in these muffins. It's a tasty muffin that would be good for breakfast or afternoon tea. They are lightly sweet with a nice lemon flavor throughout and bits of dried dates in every bite. The lemon glaze adds an extra touch of sweetness. Yum!

Ingredients
- MUFFINS
- 2 cups all-purpose flour
- 1/3 cup packed dark brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 pinch salt
- 3/4 cup Dairy sour cream
- 3/4 cup packaged pre-cut dates
- 2 tablespoons butter, melted
- 3 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 large egg
- GLAZE (OPTIONAL)
- 1 cup powdered sugar
- 1 teaspoon soft margarine
- lemon juice
How To Make healthier lemon date muffins

Step 1Preheat the oven to 400 degrees F. Place cupcake papers in a muffin pan. Spray the papers with non-stick spray. Set aside.

Step 2To make the muffins, combine the flour, brown sugar, baking powder, baking soda, and salt in a medium bowl; mix.

Step 3In a separate medium bowl, combine the remaining ingredients. Mix well.

Step 4Add the sour cream mixture to the flour mixture; batter will be dough-like.

Step 5Divide batter in half in the bowl, then 1/2 again (this makes it easier to distribute evenly).

Step 6This should fill each paper cup to the top.

Step 7Bake for 25 minutes.

Step 8Test for doneness with a wooden toothpick. Cool completely.
