These are very tasty and the muffins were a hit with the family. I thank my grandma for this recipe, God bless her. My mom saved this recipe for me along with many others. I hope you enjoy these. I love the texture of these muffins. I have made them with other fruit that has been dried, fresh fruit and nuts as well. I even make them with trail mix once (just chop it up first and dust with flour).

We loved the date and lemon flavor combination in these muffins. A tasty muffin that would be good for breakfast or afternoon tea. They are lightly sweet with nice lemon flavor and bits of dried dates in every bite. The lemon glaze adds an extra touch of lemon flavor and sweetness. Yum!

Ingredients For lemon date muffins - healthy

  • 2 c
    all-purpose flour
  • 1/3 c
    dark brown sugar, packed
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • a pinch
    salt
  • 3/4 c
    Dairy sour cream
  • 3/4 c
    packaged pre-cut dates
  • 2 Tbsp
    melted butter
  • 3 Tbsp
    lemon juice
  • 1 Tbsp
    grated lemon rind
  • 1 lg
    egg
  • OPTIONAL GLAZE
  • 1 c
    powdered sugar
  • 1 tsp
    soft margarine
  • lemon juice

How To Make lemon date muffins - healthy

  • Prepared cupcake liners in cupcake tins.

    Preheat oven to 400 F. Place cupcake papers in a muffin pan (cupcake pan). Spray papers with non-stick spray. Set aside.
  • Dry ingredients added to a bowl.

    Combine the flour, brown sugar, baking powder, baking soda; and salt in a medium bowl; mix to blend.
  • Wet ingredients and dates added to a bowl.

    In a separate medium bowl combine remaining ingredients. Mix well to combine.
  • Wet ingredients added to dry ingredients.

    Add this to the flour mixture; batter will be dough-like.
  • Batter divided in the bowl.

    Divide batter in half in the bowl, then 1/2 again (makes it easier to evenly distribute).
  • Batter scooped into cupcake tins.

    This should fill the paper cups to the top.
  • Lemon Date Muffins baking in the oven.

    Bake for 25 minutes.
  • Checking to see if the muffins are done.

    Test for doneness with a wooden toothpick. Cool completely.
