Lemon Date Muffins - Healthy
I love the texture of these muffins and I have made them with other fruit that has been dried and fresh fruit and nuts as well... I even make them with Trail Mix once (just chop it up first and dust with flour).

2 call purpose flour
1/3 cdark brown sugar, packed
1 tspeach of baking powder and baking soda
a pinchof salt
3/4 cDairy sour cream
3/4 cpackaged pre-cut dates
2 Tbspmelted butter
3 Tbsplemon juice
1 Tbspgrated lemon rind
How to Make Lemon Date Muffins - Healthy
- Preheat oven to 400^. Place cupcake papers in a muffin pan (cupcake pan). Spray papers with non-stick spray. Set aside.
- Combine the flour, brown sugar, baking powder, baking soda and salt in a medium bowl; mix to blend.
