Ingredients
- 1/2 cup sugar or splenda
- 1/3 cup shortening
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups milk (i used 2% milk)
- 1 teaspoon ground cinnamon
- 1/2 cup light brown sugar (i used splenda brown sugar)
- 1 stick butter, melted
How To Make cowboy muffins from i should be mopping the floor

Step 1In mixing bowl cream together sugar,shortening and egg. In a separate bowl,combine flour, baking powder and salt. Add the flour mixture and milk alternately to the sugar,shortening and egg mixture. Beating well.

Step 2Fill 12 greased muffin cups 2/3 full {don’t use paper baking cup liners}. Bake at 350 for 20-25 minutes or until golden brown. Get ready to DUNK. Or dip. Whichever you prefer. Combine remaining 1/2 cup sugar and cinnamon.

Step 3While muffins are still hot out of the oven, submerge in melted butter. Roll in cinnamon sugar mixture until well coated. Serve warm {with a tallllllll glass of milk}. Great as mini muffins too. Serve with fruit on the side.
