1/2 c
sugar or splenda
1/3 c
1 large
1 1/2 c
all-purpose flour
1 1/2 tsp
baking powder
1/2 tsp
1 1/2 c
milk (i used 2% milk)
1 tsp
ground cinnamon
1/2 c
light brown sugar (i used splenda brown sugar)
1 stick
butter, melted

How to Make Cowboy Muffins From I should be mopping the floor


  • 1In mixing bowl cream together sugar,shortening and egg. In a separate bowl,combine flour, baking powder and salt. Add the flour mixture and milk alternately to the sugar,shortening and egg mixture. Beating well.
  • 2Fill 12 greased muffin cups 2/3 full {don’t use paper baking cup liners}. Bake at 350 for 20-25 minutes or until golden brown. Get ready to DUNK. Or dip. Whichever you prefer. Combine remaining 1/2 cup sugar and cinnamon.
  • 3While muffins are still hot out of the oven, submerge in melted butter. Roll in cinnamon sugar mixture until well coated. Serve warm {with a tallllllll glass of milk}. Great as mini muffins too. Serve with fruit on the side.
