Coconut Chia Fruit Muffins
Pictured is the pineapple experiment. The best so far!
1 corganic coconut flour
1/2 tspsea salt
1 tspbaking soda
1/2 craw honey (i use half this) or 1/2 cup drained pineapple juice
1 ccoconut milk, unsweetened
4 Tbsporganic coconut oil, melted
4 Tbsppure vanilla extract
4 Tbsporganic chia seeds
1 coraganic blueberries or 1 can crushed pineapple (reserving liquid)
How to Make Coconut Chia Fruit Muffins
- Preheat oven to 350. Sift coconut flour, salt, and baking soda in a bowl.
- In a separate bowl or blender, whisk honey, coconut milk, eggs, coconut oil and vanilla. Gently stir wet mixture into dry ingredients and mix in chia seeds.
- Fold in the blueberries and pour batter into greased or lined muffin tin, filling 3/4 full. Bake for 25 minutes until muffins begin to turn golden brown and are cooked through. Immediately remove from tins and cool on rack.
