coconut chia fruit muffins

My first attempt at something actually healthy. These are delicious! I want to experiment with different kinds of fruit; like, maybe, pineapple. Oooh, a pina colada muffin. And, of course, my raspberries when they blossom. These are very yum, and good for you! Pictured is the pineapple experiment. The best so far!

Ingredients

  • 1 cup organic coconut flour
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking soda
  • 1/2 cup raw honey (i use half this) or 1/2 cup drained pineapple juice
  • 1 cup coconut milk, unsweetened
  • 6 - eggs
  • 4 tablespoons organic coconut oil, melted
  • 4 tablespoons pure vanilla extract
  • 4 tablespoons organic chia seeds
  • 1 cup oraganic blueberries or 1 can crushed pineapple (reserving liquid)

How To Make coconut chia fruit muffins

  • Step 1
    Preheat oven to 350. Sift coconut flour, salt, and baking soda in a bowl.
  • Step 2
    In a separate bowl or blender, whisk honey, coconut milk, eggs, coconut oil and vanilla. Gently stir wet mixture into dry ingredients and mix in chia seeds.
  • Step 3
    Fold in the blueberries and pour batter into greased or lined muffin tin, filling 3/4 full. Bake for 25 minutes until muffins begin to turn golden brown and are cooked through. Immediately remove from tins and cool on rack.
