amazing grape-nut muffins
These muffins are tasty and quick to make. Your family will love the flavor and they won't even know that they are good for them too! NOTE: If you do not have the Hazelnut coffee creamer you can use regular milk or 2%. Also if you do not have the peach butter butter you can use apple butter or apple sauce, or mashed banana. Raisins may be added, if desired.

Ingredients
- 1 1/4 cups grape-nut original cereal
- 1 cup hazelnut coffee creamer
- 1 teaspoon vanilla extract
- 3 tablespoons butter,melted
- 1/2 cup peach butter or mashed banana or applesauce
- 1 large egg
- 1/2 cup chopped walnuts
- 1 1/2 cups all purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar, firmly packed
How To Make amazing grape-nut muffins

Step 1Heat oven to 400^. Spray 12-16 regular size muffin wells--(cupcake pan);with no stick spray..set aside. In a medium bowl add the cereal and milk,mix slightly-then set aside.

Step 2In a large bowl combine the flour, baking powder,baking soda,cinnamon, brown sugar and salt.Mix with large spatula to combine and break up any sugar lumps. Set aside.

Step 3To the cereal /cream bowl add the egg and beat with a spoon. Stir in the peach butter,vanilla, melted butter and nuts..stir to combine well. Stir this mixture into the flour mixture and fold until flour is mixed in, only until moistened.

Step 4Spoon batter evenly into the prepared muffin cups, fill each cup to the top. Bake 22-25 minutes or until wooden toothpick inserted in centers comes out clean. Cool in pan 2 minutes. Remove to wire rack to cool.
