Ingredients
- 16 ounces cooked mashed potatoes
- 1 cup light brown sugar
- 1/4 cup water or 2% milk
- 2 1/4 cups southern buttery biscuit mix
- 1/4 teaspoon allspice ( if desired)
How To Make virgil's sweet potato biscuits
-
Step 1Peel and cook sweet potatoes, set aside to cool. Mix together sweet potatoes, brown sugar, biscuit mix, and water or milk. (milk is best)
-
Step 2Combine ingredients completely, the mixture should be moister than regular biscuit. Flour table roll biscuit mix to 1/2 inch thickness. Cut with 1 1/2 inch biscuit cutter. Place on a greased baking sheet.
-
Step 3Bake in a preheated 350 degree oven for 17 minutes. This mixture does not allow the biscuits to rise much. It's good to have a timer on hand to let you know when the biscuits are done
-
Step 4Serve with fresh butter or Land-O-Lakes cream. Also good with sausage patties.
