virgil's sweet potato biscuits

This recipe comes from my DAD, and I think he got it from his Mother ( GOOD OL GRANDMA )

Ingredients

  • 16 ounces cooked mashed potatoes
  • 1 cup light brown sugar
  • 1/4 cup water or 2% milk
  • 2 1/4 cups southern buttery biscuit mix
  • 1/4 teaspoon allspice ( if desired)

How To Make virgil's sweet potato biscuits

  • Step 1
    Peel and cook sweet potatoes, set aside to cool. Mix together sweet potatoes, brown sugar, biscuit mix, and water or milk. (milk is best)
  • Step 2
    Combine ingredients completely, the mixture should be moister than regular biscuit. Flour table roll biscuit mix to 1/2 inch thickness. Cut with 1 1/2 inch biscuit cutter. Place on a greased baking sheet.
  • Step 3
    Bake in a preheated 350 degree oven for 17 minutes. This mixture does not allow the biscuits to rise much. It's good to have a timer on hand to let you know when the biscuits are done
  • Step 4
    Serve with fresh butter or Land-O-Lakes cream. Also good with sausage patties.
