blueberry lemon scones

I made these this morning. I was going to make my other scones that I have posted on here but I was out of butter and eggs UGH!!! So I made do with what I had LOL. And they tuned out TASTY!! Enjoy!!

Ingredients

  • 2 cups flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • - lemon zest, grated from 1 lemon
  • 1/4 cup shortening
  • 8 ounces sour cream
  • 2 tablespoons cream
  • 1 cup blueberries, frozen

How To Make blueberry lemon scones

  • Step 1
    Mix flour, brown sugar, baking powder, baking soda, salt and lemon zest in a bowl.
  • Step 2
    cut in shorting until crumbly add blueberries and stir to coat, make a well in the flour mixture add sour cream and cream mix until dough starts to form
  • Step 3
    turn ot onto floured surface and fold a few times to make a disk out of the dough, pat into a 7 inch disk and cut into 12 wedges, place on baking sheet an inch apart and bake at 400 for 10 to 15 minutes or until lightly browned
  • Step 4
    cool for 5 minutes and then glaze with a lemon glaze. I use 1 cup of powder sugar and the juice of a lemon, add juice to the powder sugar slowly until a consistency for drizzling
