FRESH VEGETABLE APPETIZER PIZZAS

1 1/4 cfinely chopped assorted fresh vegetables (broccoli, carrots, red onion, yellow summer squash, red bell pepper, mushrooms)
·dash of pepper
1/4 tspgrated lemon peel
4 - 5 ozone container garlic-and-herb spreadable cheese (option: soft cream cheese spread with onions & chives)
5whole-wheat flatbreads (6-inch) or pita breads. (option: artisan flatbreads-flatout/foldit, 9 oz. pkg.)
1/3 cfinely shredded sharp cheddar cheese
How to Make FRESH VEGETABLE APPETIZER PIZZAS
- In small bowl, place vegetables. Sprinkle with salt, pepper and lemon peel. (NOTE: Be sure to rinse & spin your vegetables before chopping.)
- Spread 2 tablespoons spreadable cheese over each flatbread. Top each with 1/4 cup vegetable mixture. Sprinkle with Cheddar cheese. Cut each into 6 wedges.
