An appetizer for the Mediterranean healthy lifestyle. A quick & easy method for chopping vegetables is using a Vidalli Chop Wizard or a Cuisinart food processor. RECIPE: Coutesy of Betty Crocker.

Ingredients For fresh vegetable appetizer pizzas

  • 1 1/4 c
    finely chopped assorted fresh vegetables (broccoli, carrots, red onion, yellow summer squash, red bell pepper, mushrooms)
  • 1/4 tsp
    salt
  • dash of pepper
  • 1/4 tsp
    grated lemon peel
  • 4 - 5 oz
    one container garlic-and-herb spreadable cheese (option: soft cream cheese spread with onions & chives)
  • 5
    whole-wheat flatbreads (6-inch) or pita breads. (option: artisan flatbreads-flatout/foldit, 9 oz. pkg.)
  • 1/3 c
    finely shredded sharp cheddar cheese

How To Make fresh vegetable appetizer pizzas

  • 1
    In small bowl, place vegetables. Sprinkle with salt, pepper and lemon peel. (NOTE: Be sure to rinse & spin your vegetables before chopping.)
  • 2
    Spread 2 tablespoons spreadable cheese over each flatbread. Top each with 1/4 cup vegetable mixture. Sprinkle with Cheddar cheese. Cut each into 6 wedges.
