cucumber soup bowls

This is another fun recipe! You make this traditional Greek soup and serve cold, or you make the small Bowls from cucumbers and serve cold... So this is actually two recipes in one! But WAIT... that's not all...!!! There is a third recipe thrown in using flavored yogurt and fruit! My grandchildren love vegetables, and we like to prepare them in interesting and fun ways... this is one of their favorite recipes! Tradition with a twist! This is dedicated to all of my Greek cousins! Play With Your Food!

Ingredients

  • CUCCUMBER BOWLS
  • 8 - 20 - cuccumbers, cut into round "tubes' abot 1 - 1/2 to 2 inches tall
  • CUCCUMBER "SOUP"
  • 2-3 - cuccumbers (peeled, deseeded, chopped small)
  • 3 cups greek yogurt, plain
  • 2 tablespoons sugar
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon sea salt
  • 1 tablespoon lemon zest, grated fine
  • 2 tablespoons lemon juice, fresh
  • 1 - 2 teaspoons rodelle vanilla extract
  • 2 tablespoons mint, fresh, minced fine
  • 2 tablespoons dill, fresh, minced fine
  • GARNISHES (OPTIONAL)
  • - lemon zest, grated or slivered thin
  • - mint, fresh, cut in thin strips with a scissor
  • - fresh berries: strawberry, raspberry, blueberry

How To Make cucumber soup bowls

  • Step 1
    Put all "soup ingredients into food processor or blender to smooth out the "soup" a bit. Set in refrigerator until needed.
  • Step 2
    Peel strips of the green off of the cucumber. Cut into 1-1/2 to 2 inch thick rounds, forming a tube shape.
  • Step 3
    Scoop out most of the seeds in center of each "tube", be careful not to poke all the way through or your "bowls" will leak. Use a teaspoon or small melon baller. Set onto a tray until ready to fill and garnish.
  • Step 4
    Fill the "bowls with the "soup" recipe or with the flavored yogurt.
  • Step 5
    Top the "soup bowls" with thin strips of basil and/or mint that you cut into thin strips using a scissor. (The scissor will do less bruising to the leaves). Top the flavored yogurt "bowls" with fruit.
  • Step 6

    Flavored Greek Yogurt or your favorite flavored yogurt.
  • 24 ounce Greek Yogurt
    Step 9
    Plain Greek Yogurt or flavored yogurt.
