I make this at my shows, and they love it. Simple but elegant. Great for entertaining or for a nice early Sunday dinner.

Mozzarella and tomatoes are one of those classic flavor combinations that can simply do no wrong. These Caprese pizzas taste like summer! Brushing the store-bought crust with olive oil, garlic, and Parmesan cheese adds flavor and lets the crust crisp nicely. It's topped with slices of fresh mozzarella cheese, tomatoes, and basil oil. Cut into squares, these are a wonderfully easy and versatile recipe that can serve a crowd. We drizzled ours with a little balsamic vinegar too which was delish.

Ingredients

  • 3 medium vine-ripened tomatoes
  • 1 teaspoon salt
  • 1 tablespoon + 2 tsp olive oil, divided
  • 1 package refrigerated pizza crust
  • 1 clove garlic clove, pressed
  • 1 ounce Parmesan cheese
  • 2 teaspoons chopped fresh basil
  • 8 ounces fresh mozzarella cheese

How To Make caprese pizzas

  • Place tomato slices on a paper towel and sprinkle with salt.
    Step 1
    Preheat oven to 425 degrees F. For toppings, slice tomatoes into 1/4-inch slices. Place onto a paper towel-lined cutting board. Sprinkle both sides evenly with salt; let stand 15 minutes.
  • Roll out pizza dough.
    Step 2
    Meanwhile, lightly brush a rectangle stone with 1 tsp of the oil for crusts. Unroll the dough.
  • Add garlic and oil to a bowl.
    Step 3
    Press garlic into a prep bowl and combine with 1 Tbsp of oil.
  • Brush dough with the garlic oil.
    Step 4
    Brush the garlic oil over the dough.
  • Grate Parmesan cheese over the dough.
    Step 5
    Grate Parmesan cheese using a cheese grater fitted with a coarse grating drum; sprinkle evenly over the dough.
  • Cut dough into 3 slices and place on a prepared baking sheet or baking stone.
    Step 6
    Cut the dough lengthwise into thirds with a pizza cutter. Carefully move the dough strips slightly apart on the baking stone.
  • Bake for 11 - 12 minutes.
    Step 7
    Bake 11-12 minutes or until the bottom of the crusts are light golden brown.
  • Chop basil and combine with oil.
    Step 8
    While crusts bake, finish toppings. Chop basil. Combine with the remaining 1 tsp oil in another prep bowl and set aside for later use.
  • Slice the mozzarella cheese.
    Step 9
    Blot the tops of tomato slices with paper towels.
  • Blot the tomatoes.
    Step 10
    Slice the mozzarella cheese into 1/4-inch thick slices.
  • Arrange cheese and tomatoes on top of the baked crust.
    Step 11
    Arrange tomato and cheese slices in overlapping rows on baked crusts. Return to oven; bake an additional 4-5 minutes or just until cheese melts.
  • Brush with the basil mixture.
    Step 12
    Remove the baking stone from the oven. To serve, brush basil mixture over pizzas using a silicone basting brush and sprinkle with black pepper.
  • Cut into pieces.
    Step 13
    Cut into pieces.
