Caprese Bites

This is a great appetizer in the summer when tomatoes are at their peak!

  • 1/3 c
    olive oil
  • 1
    juice of 1 lemon
  • 4
    plum tomatoes
  • 3 clove
  • 1 tsp
    garlic powder
  • 1 tsp
    kosher salt
  • 1 tsp
    fresh ground black pepper
  • 1
    loaf 2 inch diameter crusty french bread sliced in 1/2 inch slices on the diagonal
  • 24 large
    fresh basil leaves
  • 1 lb
    fresh mozzarella

How to Make Caprese Bites


  1. In a large mixing bowl whisk together garlic, seasoned salt, black pepper, lemon juice and olive oil.
  2. Gently fold in tomatoes until well coated.
  3. Chill in refrigerator for 30 minutes.
  4. Remove tomatoes from olive oil mixture and set aside.
  5. Brush tops of bread slices with olive oil mixture that tomatoes were marinating in.
  6. Place bread on a cookie sheet and bake in oven for about 5 minutes. Until just toasted.
  7. Place 1 large leaf of Basil on each slice of bread and top with a slice of tomato.
  8. Scoop mozzarella cheese with a half round tablespoon size measuring spoon and top tomato slices with mozzarella cheese.
