Ingredients
- 1/3 cup olive oil
- 1 - juice of 1 lemon
- 4 - plum tomatoes
- 3 cloves garlic
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1 teaspoon fresh ground black pepper
- 1 - loaf 2 inch diameter crusty french bread sliced in 1/2 inch slices on the diagonal
- 24 large fresh basil leaves
- 1 pound fresh mozzarella
How To Make caprese bites

Step 1In a large mixing bowl whisk together garlic, seasoned salt, black pepper, lemon juice and olive oil.

Step 2Gently fold in tomatoes until well coated.

Step 3Chill in refrigerator for 30 minutes.

Step 4Remove tomatoes from olive oil mixture and set aside.

Step 5Brush tops of bread slices with olive oil mixture that tomatoes were marinating in.

Step 6Place bread on a cookie sheet and bake in oven for about 5 minutes. Until just toasted.

Step 7Place 1 large leaf of Basil on each slice of bread and top with a slice of tomato.

Step 8Scoop mozzarella cheese with a half round tablespoon size measuring spoon and top tomato slices with mozzarella cheese.
