Ingredients
- 1 kilogram eggpant
- 1/2 cup tahini sauce
- 1/2 cup yogurt
- 3 tablespoons red vinegar or pomegranate molasses or lemon juice
- - salt to taste
- 1 teaspoon oregano, dried , or pepperment leaves
How To Make baba-ganouj

Step 1-Make slits in the eggplants before roasting in the oven Sometimes I wrap it with aluminum foil -Roast for half an hour -Cut in the middle and scoop out the pulp into a bowl -Gently mash it with a fork -Let cool before adding anything else -You may freeze the roasted eggplants for future use

Step 2-Add tahini sauce, yogurt vinegar and salt. Combine well in a mixing bowl .

Step 3Add olive oil on top and serve as an appetizer with pita bread .

Step 4Garnish with cut parsley, or sprinkle cumin and sumac in a decorative way.
