Baba-Ganouj (???? ????), is eggplant salad or dip that is a popular Middle Eastern dish made primarily of eggplant. The eggplants are roasted to get a smoky taste, mashed and mixed with various usually eaten as a dip with pita bread , flat bread or nan .

Ingredients For baba-ganouj

  • 1 kg
  • 1/2 c
    tahini sauce
  • 1/2 c
  • 3 Tbsp
    red vinegar or pomegranate molasses or lemon juice
  • salt to taste
  • 1 tsp
    oregano, dried , or pepperment leaves

How To Make baba-ganouj

    -Make slits in the eggplants before roasting in the oven Sometimes I wrap it with aluminum foil -Roast for half an hour -Cut in the middle and scoop out the pulp into a bowl -Gently mash it with a fork -Let cool before adding anything else -You may freeze the roasted eggplants for future use

    -Add tahini sauce, yogurt vinegar and salt. Combine well in a mixing bowl .

    Add olive oil on top and serve as an appetizer with pita bread .

    Garnish with cut parsley, or sprinkle cumin and sumac in a decorative way.
