Ingredients
- SLIDERS
- 1 pound shrimp, peeled, deveined, quartered and divided
- 4 tablespoons red peppers, roughly chopped and divided
- 4 tablespoons green onions, roughly chopped and divided
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon old bay seasoning
- 1/2 teaspoon mild paprika
- 1/2 teaspoon lemon zest
- 1/2 teaspoon ground himalayan sea salt, or to taste
- 1/4 teaspoon freshly ground black pepper, or to taste (i always use mixed peppercorns)
- 1 large clove garlic, halved
- 1 tablespoon fresh dill, chopped
- 3/4 cup panko breadcrumbs
- 1 tablespoon canola oil, or as needed plus more for hands
- lettuce and tomatoes, for garnish
- MAYO SAUCE
- 1/2 cup mayo
- 1 teaspoon sriracha sauce, or to taste
How To Make shrimp sliders

Step 1In the bowl of a food processor, add ½ lb. shrimp, 2 tbsp. red peppers, 2 tbsp. green onions, lemon juice, Old Bay seasoning, paprika, lemon zest, salt, pepper and garlic.

Step 2Process until the ingredients are finely chopped and the mixture turns into a thick paste, about 30 seconds, cleaning the sides of the bowl.

Step 3Transfer the mixture to a medium bowl and add the remaining ½ lb. shrimp, the remaining 2 tablespoons red peppers as well as green onions, dill, and ¼ cup of panko breadcrumbs.

Step 4Combine all the ingredients until nicely blended before adding another ¼ cup of breadcrumbs, mix again and add the last ¼ cup.

Step 5With greased hands, scoop about 2 ½ tablespoons and form a patty. Place on a baking sheet lined with a silicone mat while making the others.

Step 6Cover with plastic wrap and transfer to the fridge for at least 30 minutes but ideally, 2 hours is better.

Step 7Meanwhile, mix the sauce ingredients, cover and chill until ready to serve.

Step 8In a large skillet over medium-high heat, add 1 tablespoon of canola oil and when it’s hot, add the shrimp patties.

Step 9Grill for 5 minutes before flipping them and grilling the other side until nicely browned, about 3 to 4 minutes.

Step 10Spread mayo sauce on the top and bottom buns, place lettuce then the patties on top followed by tomato slices. Makes 9 sliders.
