Okay, it’s a slow day in the test kitchen, and I’m ready for some experimentation… Got some scallops and some other ingredients. Time for some fun. So, you ready…. Let’s get into the kitchen.

Ingredients
- 3 slices organic bacon
- 1 medium apple
- 1 medium tomato
- 1 medium avocado
- 1 medium lemon
- 4 medium scallops
- - salt, kosher variety, to taste
- - black pepper, freshly ground, to taste
How To Make awesome scallop appetizers

Step 1Gather your ingredients.

Step 2Add the bacon to a sauté pan.

Step 3Cook until crispy.

Step 4Chef’s Note: Leave the pan, as is… we’ll be using it for the scallops.

Step 5Dice and reserve the bacon.

Step 6Dice the apple, and reserve.

Step 7Dice the tomato, and reserve

Step 8Slice the avocado in half, and remove the seed.

Step 9Slice the avocado with a pairing knife into cubes.

Step 10Add the avocado to a bowl and reserve.

Step 11Add the apple, bacon, tomato, and avocado to a bowl.

Step 12Add the juice of half a lemon, and a tablespoon of olive oil, and mix.

Step 13Remove all the moisture from the scallops and add to the pan that cooked the bacon.

Step 14With the pan on medium heat, cook one side for three minutes.

Step 15Turn the scallops over, and cook for an additional three minutes.

Step 16Take 1/2 cup of the avocado/apple mixture and add to a plate.

Step 17Chef’s Note: If you have a tower container, use it.

Step 18Press down and make look nice.

Step 19Add a scallop to the top, and some decoration.

Step 20Serve warm. Enjoy.

Step 21Keep the faith, and keep cooking.
