crunchy chicken salad

This is my "go to " chicken salad recipe for any party or get together; deli-style.

Ingredients

  • 3 cups cooked chicken , shredded then chopped
  • 1/2 cup finely diced celery
  • 1/2 cup water chestnuts, rinsed and drained, then diced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup yellow bell pepper, diced
  • 1/4 cup chopped red onion
  • 1 1/2 cups miracle whip salad dressing or mayonnaise(more or less to make moist)
  • 1 pinch ground red pepper, or to taste
  • 1/4 teaspoon each salt and white pepper

How To Make crunchy chicken salad

  • Step 1
    Shred the chicken(about 3 cups).. Combine chicken. celery, water chestnuts, and the next 3 ingredients in a large bowl.
  • Step 2
    Stir together the salad dressing, ground red pepper, salt and pepper until well blended; spoon over the chicken mixture, stirring to coat. Cover and chill at least 4 hours.
  • Step 3
    Note: Can use cooked salad shrimp in place of the chicken.
