I love guacamole & fruit. Why not grilled & together? it's healthy & it will keep ya coming back for more!

Ingredients

  • 3 medium avocados (semi soft)
  • 1 & 1/2 cups pineapple, fresh
  • 2 small jalapenos, (red for the color) fresh & minced with or without seeds
  • 2 medium tomatoes, fresh, small chopped size
  • 1-2 tablespoon sriracha hot chili sauce
  • 1/2 teaspoon ginger powder (ground)
  • 1 pinch cinnamon, ground
  • 1 bunch cilantro, fresh
  • 4 small limes, juiced
  • 2 tablespoons honey
  • 1 tablespoon orange juice, fresh
  • 3 cloves garlic
  • 2-4 pinches salt and pepper
  • 1 pound tortilla chips
  • 1 large pretty clear glass bowl

How To Make spit fire grilled honey pineapple guacamole

  • Step 1
    Light your grill or turn it on to medium high. Cut in half & remove skin & the core seeds. Cut, remove skin, & core on your pineapple. Cut it into long slices. Grill both sides of the avocados & pineapple slices. 2-3 min on each side. Make sure to get the grill marks on both sides of the pineapple slices & avocados. While the pineapple slices & avocados are grilling:
  • Step 2
    In a small bowl: add honey, orange juice, ginger, & cinnamon, & 1 tablespoon of the lime juice (1 whole lime juiced is approximately a tablespoon, juiced) Stir with fork. Set aside a pastry brush or a small spoon to brush on the pineapple. Now there is grill marks on your pineapple, brush the honey orange glaze on the pineapple. Let the glaze sizzle for 2-3 min. Remove & let cool.
  • Step 3
    Make your guacomole. Cut your grilled avocados in a small dice. Also cut your pineapple in extra small dice. Keep a small sliver aside to have for your garnish. In a large bowl, combine avocado. Lightly mash with a fork the avocado. Add tomatoes, jalapeno, sriracha, & then your extra small diced size pineapple. Stir. Mince or finely chop your cilantro & add in with the quacamole. Cut off the stems of the cilantro. Keep a leaf of cilantro for your garnish. Then cut your limes in half, squeeze on top. Lightly stir again.
  • Step 4
    Taste to see if salt or pepper needs to be added. Spoon into a pretty clear glass dish. Garnish with a sliver of honey orange pineapple & cilantro. This can be eaten with tortilla chips, fresh veggies, crackers. Bon Appetite!
