- 1 - loaf good quality bread for toasting
- 3 tablespoons olive oil
- 3 tablespoons tomato paste
- 1 tablespoon salted capers
- - pickled red onion slices or plain
- - chunky tuna packed in olive oil
- - olives, black or green
- - fresh herbs (your choice)
- - cheese, your preference, optional
- - salt and pepper to taste
How To Make malta-style bruschetta

Step 1Slice bread into 1/2-3/4 inch slices and drizzle with olive oil. Grill them in a grill pan or indoor grill until golden brown and set aside.

Step 2Add a light sprinkling of olive oil and then spread each slice with tomato paste. Begin stacking your bruschetta with tuna, onion, capers and olives - cheese (if using) and completed each bruschetta with fresh chopped herbs.
