Ingredients For malta-style bruschetta

  • 1
    loaf good quality bread for toasting
  • 3 Tbsp
    olive oil
  • 3 Tbsp
    tomato paste
  • 1 Tbsp
    salted capers
  • pickled red onion slices or plain
  • chunky tuna packed in olive oil
  • olives, black or green
  • fresh herbs (your choice)
  • cheese, your preference, optional
  • salt and pepper to taste

How To Make malta-style bruschetta

  • 1
    Slice bread into 1/2-3/4 inch slices and drizzle with olive oil. Grill them in a grill pan or indoor grill until golden brown and set aside.

    Add a light sprinkling of olive oil and then spread each slice with tomato paste. Begin stacking your bruschetta with tuna, onion, capers and olives - cheese (if using) and completed each bruschetta with fresh chopped herbs.
