Ingredients

  • 1 - loaf good quality bread for toasting
  • 3 tablespoons olive oil
  • 3 tablespoons tomato paste
  • 1 tablespoon salted capers
  • - pickled red onion slices or plain
  • - chunky tuna packed in olive oil
  • - olives, black or green
  • - fresh herbs (your choice)
  • - cheese, your preference, optional
  • - salt and pepper to taste

How To Make malta-style bruschetta

  • Step 1
    Slice bread into 1/2-3/4 inch slices and drizzle with olive oil. Grill them in a grill pan or indoor grill until golden brown and set aside.
  • Step 2
    Add a light sprinkling of olive oil and then spread each slice with tomato paste. Begin stacking your bruschetta with tuna, onion, capers and olives - cheese (if using) and completed each bruschetta with fresh chopped herbs.
