easy mexican chorizo

Numerous times I have substituted other sausage for Chorizo when I didn't have it or could not find it at the market. I was told that it is not hard to make it so I read a bunch of recipes and put together this recipe. This recipe uses easy to find ingredients that I had on hand. It is very easy to make. And best of all it turned out to be delicious.

Ingredients

  • 2 pounds boneless pork
  • 2 teaspoons salt
  • 2 to 4 tablespoons chili powder
  • 3 cloves garlic, smashed and minced
  • 4 teaspoons white vinegar, (i used coconut vinegar)
  • 2 teaspoons oregano

How To Make easy mexican chorizo

  • Step 1
    Add the pork to a food processor or grinder and give it a coarse grind.
  • Step 2
    Add all the rest of the ingredients and process to mix well. Put sausage blend into a refrigerator container and allow it to refrigerate overnight, at least 6 hours.
  • Step 3
    Fry the sausage for about 30 minutes. Any of the sausage that is not going to be used right away should be frozen in small portions until you need it.
