This is always requested by my friends and family. So easy and super yummy! I actually don't make it into a ball shape anymore, but I still call it that.

Who doesn't love a good cheese ball? This is an easy one for St. Patrick's Day. The creamy cream cheese and savory corned beef is a super combination. Green onions, along with the citrus lemon juice, add some freshness. Horseradish gives it a nice zing. You won't be able to stop munching on this.

Ingredients

  • 2 packages cream cheese, room temperature (8 oz each)
  • 4 packages Buddig corned beef (2 oz each)
  • 2 stalks green onion
  • 1 tablespoon mayonnaise (to taste)
  • 1 teaspoon Worcestershire sauce (to taste)
  • 1 teaspoon lemon juice (to taste)
  • 1 teaspoon horseradish (to taste)

After chilling for 30 minutes, this is ready to eat but it will be more like a dip. If you want to form it into a cheese ball, we suggest chilling it for a few hours before unmolding it.
  • Cream cheese coming to room temperature.
    Step 1
    Allow the cream cheese to soften to room temperature.
  • Chopping corned beef and green onions.
    Step 2
    Chop corned beef and green onions small using an electric chopper or food processor.
  • Mixing corned beef, green onions, and cream cheese.
    Step 3
    Add corned beef, green onions, and cream cheese. Mix together.
  • Adding mayonnaise, lemon juice, Worcestershire, and horseradish.
    Step 4
    Mix in mayonnaise, lemon juice, Worcestershire, and horseradish to taste making it tangy.
  • Inside of the chilled Corned Beef Cream Cheese Ball.
    Step 5
    Refrigerate at least 1/2 hour until ready to serve with your favorite crackers.
