- red and green salsa
- 8 ounces chorizo
- 1 cup cheddar cheese, shredded
- 1 cup monterey jack cheese, shredded
- 3 10-inch flour tortillas

Step 2Remove and throw away the casing from the chorizo. Heat up a large skillet, when heated crumble chorizo into the skillet and brown for 6 to 8 minutes using a spoon to break up the meat. When done remove from skillet and drain on paper towels.

Step 3Turn on oven and preheat to 450F.

Step 4Mix the two cheeses in a bowl.

Step 5Put flower tortillas on baking sheets. Add chorizo on top of tortillas leaving 1/2 inch edge around the outside with no meat. Sprinkle cheese mixture over the top.

Step 6Bake until edges are golden and crisp; and cheeses are melted and bubbly -- about 8 to 10 minutes.

Step 7Move to serving plates; cut each tortilla into 6 wedges. Sprinkle Red and Green salsa over the top if desired or use the salsa of your choice.
