CRANBERRY-GINGER CHUTNEY

Ingredients

1 1/2 ccranberries

3/4 cbrown sugar, packed

1/3 cdried apricot halves, chopped

1/3 cgolden raisins
-
2 Tbspfinely chopped, peeled fresh ginger

2 Tbspcranberry juice
-
3/4 tspground cardamom
-
1/4 tspcayenne pepper
How to Make CRANBERRY-GINGER CHUTNEY
- In a medium saucepan, combine all the above ingredients and cook over medium heat, stirring constantly, until sugar is dissolved...Cook, uncovered, for 3 to 4 minutes more or till cranberries pop, stirring occasionally.
- Transfer to a bowl; let stand about 1 hour or until completely cool.
Cover and chill for up to 1 week....
