My collection of recipes for the Christmas Holidays...this is one of the many I have collected over the years....

Ingredients

  • 1 1/2 cups cranberries
  • 3/4 cup brown sugar, packed
  • 1/3 cup dried apricot halves, chopped
  • 1/3 cup golden raisins
  • 2 tablespoons finely chopped, peeled fresh ginger
  • 2 tablespoons cranberry juice
  • 3/4 teaspoon ground cardamom
  • 1/4 teaspoon cayenne pepper

How To Make cranberry-ginger chutney

  • Step 1
    In a medium saucepan, combine all the above ingredients and cook over medium heat, stirring constantly, until sugar is dissolved...Cook, uncovered, for 3 to 4 minutes more or till cranberries pop, stirring occasionally.
  • Step 2
    Transfer to a bowl; let stand about 1 hour or until completely cool. Cover and chill for up to 1 week....
