Ingredients
- - cornmeal (for dusting pan)
- 2 cups sharp cheddar cheese, shredded
- 1 cup sharp cheddar cold pack cheese, softened
- 1 cup parmesan cheese, grated
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon ground cumin
- 4 large eggs, beaten
- 1 jar (2-oz) pimentos, sliced
- 1 can (4-oz) jalapenos, drained and chopped
- - cayenne pepper, to taste

Step 1Preheat oven to 350°F (175°C). Butter a 9-inch square pan. Sprinkle cornmeal in pan, coating pan well.

Step 2Cream cheeses until well-blended; add garlic powder, oregano and cumin. Beat in eggs. Stir in pimentos and jalapeños. Add cayenne pepper; mix ingredients well.

Step 3Spread mixture in pan, smoothing top.

Step 4Bake 30 minutes.

Step 5Let stand 10 minutes before cutting into bite-size cubes. Serve warm or at room temperature.
