These little peppery cheese bites go over big at all get-togethers. For a milder version, simply reduce the amount of jalapeño peppers and omit using the cayenne. Recipe from Wisconsin Milk Marketing Board, Inc.

cornmeal (for dusting pan)
2 c
sharp cheddar cheese, shredded
1 c
sharp cheddar cold pack cheese, softened
1 c
parmesan cheese, grated
1/4 tsp
garlic powder
1/4 tsp
dried oregano
1/4 tsp
ground cumin
4 large
eggs, beaten
1 jar(s)
(2-oz) pimentos, sliced
1 can(s)
(4-oz) jalapenos, drained and chopped
cayenne pepper, to taste

How to Make Peppery Potluck Squares


  • 1Preheat oven to 350°F (175°C). Butter a 9-inch square pan. Sprinkle cornmeal in pan, coating pan well.
  • 2Cream cheeses until well-blended; add garlic powder, oregano and cumin. Beat in eggs. Stir in pimentos and jalapeños. Add cayenne pepper; mix ingredients well.
  • 3Spread mixture in pan, smoothing top.
  • 4Bake 30 minutes.
  • 5Let stand 10 minutes before cutting into bite-size cubes. Serve warm or at room temperature.
