maria's bell peppers & feta cheese rolls

These rolls make a perfect summer appetizer or side dish for a hearty family. My kids always liked snacking on these. Make a few extra, for sure your loved ones will come back for more. Hope you enjoy! TIP: These rolls can be stored in the freezer, before baking them. When needed just take out as many as you want and directly (frozen) bake on a lightly greased baking pan.

Ingredients

  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 2 green bell peppers,chopped
  • 2 red bell peppers,chopped
  • salt & pepper to taste
  • 10 ounces feta cheese, crumbled
  • 5 ounces gruyere or gouda cheese grated
  • 2 eggs, beaten
  • 1/4 cup greek yogurt
  • handful fresh mint, finely chopped
  • 1 package phyllo dough

How To Make maria's bell peppers & feta cheese rolls

  • Step 1
    Saute onion & peppers in 3 Tbsp olive oil for about 5 min. or until softened. Add salt & pepper, careful with the salt due to the cheeses, and set aside to cool.
  • Preparing peppers & feta cheese mixture for rolls
    Step 2
    Once cooled add the crumbled feta and grated gruyere, 2 beaten eggs, the yogurt & the mint. Mix well to combine the ingredients.
  • Phyllo sheets on counter
    Step 3
    Preheat the oven at 350* F and start preparing the rolls. TIP:: Remember to cover the unused phyllo sheets with a kitchen towel (cotton or linen) so they don't dry. Spread one phyllo sheet on your kitchen counter and drizzle some olive oil, here & there. Spread one more phyllo sheet on top and again drizzle some olive oil.
  • Wrapping the peppers& feta cheese rolls.
    Step 4
    Cut the sheets into 3 long strips. At the end, closer to you, of each strip add 1 or 2 Tbsp of filling. Wrap into rolls by folding the edges inwards. Repeat the same procedure with the remaining phyllo sheets & filling.
  • Step 5
    Place the rolls in a lightly greased with olive oil, shallow baking pan or cookie sheet. Bake in preheated oven at 350* F for 30 -35 minutes or until golden & crispy. KALI OREXI: ENJOY!!
